Solid substrate fermentation processes using fungi are traditionally used in the manufacture of a wide variety of oriental foods.  Using capacitance methods can lead to significant improvements in the performance of fermentation and has proven to be a reliable, reproducible online measurement of biomass for this type of fermentation.
